Dinner for One and a Holiday Side

While I really enjoy a fancy dinner with friends (or a not so fancy dinner with my partner in crime in front of the tv), I also love the nights I get prepare a simple quirky supper meal just for me. It usually consists of a fancy (slightly off beat) grilled cheese maybe with some tart apple slices thrown in there, or a funky omelet filled with all the leftover veggies in my fridge. But this particular night I attempted to recreate a delicious side dish I had at Uchiko in Austin. I have been dreaming of these little things for a while now so i decided to give it a shot. It seemed simple enough, crispy Brussels sprouts with a spicy chili lemon sauce. And while they were delicious (I seriously stuffed my face with these bad boys), I am sad to say I haven't cracked the Uchiko secret quite yet. Here's what I did if you would like to try it out. ps. It would make a great side For Turkey Day.




I washed, trimmed the stems, and cut the sprouts in half. Tossed them in olive oil, honey, salt, pepper, and chili flakes. On medium heat, I placed the sprouts (flat side down) in pan with a little more olive oil. Let them sit for about 2-3 minutes to get a crisp going, them I flipped then and continued to cook until tender. Just before eating I squirted some lemon juice and done!
I enjoyed these lovelies with a homemade chicken salad sandwich. A healthy tip: Use plain Greek yogurt (or regular yogurt) instead of mayo in your chicken or tuna salad. I swear, i couldn't tell the difference and now it's a totally guilt free indulgence.

A Pretty Fall Afternoon at the Fair




Just some fun photos from a day at the fair. The cute little school across the street from my house hosts this fair every year on Halloween weekend. It's a pretty legit fair, complete with funnel cakes, lemonade and carnies! The only down side is that there is a carny shanty town across the street from my house for about a week every year, but i guess every joy has its price. I also found out that a 6 year old is perfect age to accompany me to such a fair, we like all the same rides. Should I be ashamed that my daredevil level is equivalent to a 1st grader? Hmm... doesnt't bother me. We had a pretty lovely fall afternoon there :) featuring my neice, Izzy, sister, Hannah, and her husband Nico
